A quick and easy way to add a salad to a meal. No dressing required. Five simple ingredients.



The cherry tomatoes actually came from my garden. I grew both red and yellow this summer – but the yellow sun-golds contracted some kind of disease and hardy produced tomatoes.



Simple Cucumber & Tomato Salad
Ingredients
- 1 medium cucumber
- 1 cup cherry tomatoes or medium tomato
- 1 tbsp lemon or lime juice
- 1/4 tsp salt or to taste
- 1 shallot (or equivalent small quantity of onion)
Instructions
- Peel the shallot and wash the veggies.
- Dice the cucumbers into 1/2 inch roughly. Cut the cherry tomatoes in half for small ones or quarters for big ones. Slice the shallot really thin
- Mix the veggies. Just before serving sprinkle on the lemon juice and salt, mix and adjust seasoning to your taste.
